A brief history of Tapas
The ancient story of the origin of Tapas came from the Andalusian region of Spain where the King at the time was known for placing a “tapadera” or “top protector” over the top of his drink. This was to prevent any dust or debris from getting into his wine. The King’s court caught on and began following suit placing pieces of bread, or cheese, or ham over their drinks and snacking on them throughout. Tapas then began to evolve and grow over the centuries. Still to this day if you order a drink in Spain, customarily you will receive a tapas free of charge. With the popularity of tapas rising and even spreading to the US, new and inventive ways making one bite of food encompass an entire course became a fun new challenge for those interested in the subject.
